2-1. Characteristics
A sweet harmony of a wide variety of sake and artisanal techniques
Whisky flavor varies greatly depending on the cask in which it is aged. Bourbon casks, sherry casks, and Japanese oak casks are commonly used, but Hibiki Blender’s Choice uses wine casks for some of its whiskies. Wine casks are generally regarded as an oddity, but whiskies aged in wine casks often have a fruity and sweet flavor, creating a mellow and sweet taste and a well-balanced flavor even when aged for a short period of time.

This book tells the stories of 13 craft distillery owners, including Ichiro Hido of Venture Whisky, famous for his Ichirose Malt, who inspired the birth of craft distilleries in Japan.
