2.About Hibiki Blender’s Choice

Launched in September 2018 as the successor line to Suntory Hibiki 17year old. It is said to be made from long-aged original sake, with an average aging time of 15 years and one part exceeding 30 years. It has a mellow and deep flavor.

2-1. Characteristics

A sweet harmony of a wide variety of sake and artisanal techniques

Whisky flavor varies greatly depending on the cask in which it is aged. Bourbon casks, sherry casks, and Japanese oak casks are commonly used, but Hibiki Blender’s Choice uses wine casks for some of its whiskies. Wine casks are generally regarded as an oddity, but whiskies aged in wine casks often have a fruity and sweet flavor, creating a mellow and sweet taste and a well-balanced flavor even when aged for a short period of time.

[Review] Hibiki Blender's Choice
It was released in September 2018 as a successor to Hibiki 17 years. It is said that the average aged 15 years and 1 part of the untied unoridated sake are used for more than 30 years, and wine barrels are used for some unwrage sake. The whisky, aged in wine barrels, produces a mellow and sweet taste even if it is aged for a short period of time, creating a balanced taste.

The book vividly depicts the days when he went to Scotland alone to study as a young man and overcame many hardships to complete Japanese whisky, as well as his companion, Rita.

(4). A Letter of Challenge from a New Generation Distillery

Launching in 2019. With the world experiencing an unprecedented whisky boom, what were the managers of craft distilleries thinking and what were their thoughts as they took on the challenge of making whisky? This book tells the stories of 13 craft distillery owners, including Ichiro Hido of Venture Whisky, famous for his Ichirose Malt, who inspired the birth of craft distilleries in Japan.

(5). Whiskey Rising

This is the Japanese version of Whisky Risng, published in the US in 2016, with much updated content. Not only does it describe the history of Japanese whisky in detail, but it also includes data on all the distilleries in Japan, including the craft distilleries that have been founded in recent years. The book also includes descriptions of the legendary bottles that have been released, as well as information on bars where Japanese whisky can be found.
