“T&T TOYAMA COLLECTION” is an original brand of sake carefully selected by Mr. Inagaki and Mr. Shimono of T&T TOYAMA from among the original sake distilled and aged at distilleries around Japan for its high quality and individuality.
This Single Malt Kanosuke is a 2019 distillation and 2023 bottling of a heavily peated malt-finished, Richard Puncheon cask.

In March 2013, he obtained a liquor sales license and began operating MALTOYAMA.
The owner, Komei Shimono, has visited over 130 whisky distilleries worldwide.
In 2020, he launched T&T TOYAMA as a project with Takahiko Inagaki of Wakatsuru Shuzo and Saburomaru Distillery, and started the world’s first full-scale Japanese whisky bottlers business in 2021.
In April 2022, T&T TOYAMA will construct the T&T TOYAMA Iba Maturation Depot and begin maturation in the depot.
MALTOYAMA specializes in mail order sales of single malt whisky.

T&T TOYAMA is a joint project by Inagaki Takahiko of Saburomaru Distillery and Shimono Tadaaki of Maltoyama to promote the attractiveness of whisky from Tomiyama Prefecture.
The name “T&T TOYAMA” is derived from the T of Inagaki Takahiko and Shimono Tadaaki, following the example of a major Scottish bottler.

The Kanosuke Distillery stands on a 9,000 m2 site along Fukiage Beach on the west coast of Kagoshima Prefecture.
The U-shaped, two-story main building houses distilling facilities, a bar with a great view, and a store selling original goods.
The main feature of the distillery is that it is equipped with three pot stills (large, medium, and small). Each has a capacity of 6,000 liters, 3,000 liters, and 1,600 liters, respectively.
Craft distilleries (small distilleries) around the world generally have two stills. Whisky is usually distilled twice, and by using pot stills with different shapes of necks and angles of line arms at the top during the second distillation (redistillation), the aroma and flavor of the original whisky can be more richly changed.
Fukiage beach, where the distillery is located, is one of the “Three Great Sand Dunes of Japan” and has been selected as one of the “100 Best Sandy Beaches in Japan. The beach stretches about 47 km from north to south, and strong winds blow in from the sea. It is hot in the summer and cold in the winter, with temperatures near zero degrees Celsius, and snow flurries are not uncommon.

4. Characteristics
This Malt Yama 10th Anniversary bottle is a single cask from the Kanosuke distillery selected by T&T TOYAMA for the Malt Yama 10th Anniversary.
It is an unusual spec, using heavily peated malt and aged in Richard Puncheon, but it shines with the delicate sweetness that is typical of Kanosuke.
The label was also illustrated by Kora, a grafficker and illustrator who posts background art on Twitter and is also a whisky enthusiast.

Following the release of the Malt Yama 10th anniversary bottle “Akashi“, the T&T COLLECTION has released a single cask of Kanosuke.
It is an interesting bottle that gives a sense of the parts that are typical of Kanosuke, even for a single cask, heavily peated. The official bottle of Kanosuke is the limited edition 2023 peated bottle, and it would be interesting for Kanosuke fans to compare the two bottles.
