BEHIND THE CASK is an authentic independent bottler’s whiskey (independent bottling business) brand from Hakodate, Hokkaido, Japan. We develop sophisticated, unique, artistic, and once-in-a-lifetime whiskey and spirits products.
We bottle, wax seal, and label each bottle carefully, all by hand in our own workshop.
The concept of our products is a hybrid of whiskey, spirits, and wine. We believe that whiskey and spirits, like wine, undergo changes in the bottle, and we use French wine bottles imported from the Bordeaux region of France, which are strong enough to withstand long-term storage and easy to convey the image of changes in the bottle from the design. We also import and use natural corks that can be stored for a long period of time. (As of June 2023, we have changed to high-quality DIAM10.) You can enjoy the fresh volatile flavor components immediately after purchase, or leave it for a while to allow them to settle.

2. about Di Tripper Distillery
Di Tripper Distillery was licensed by Behind the Cask LLC to produce whisky for the first time in Hakodate in November 2023. It will take over the former wine brewery and start producing grain whiskey made from domestic malt.
The distillery’s name is
Di Tripper Distillery was named after “Di” of “Hakodadi”, the name of the place mentioned in English in the account of Commodore Perry’s expedition to Hakodate (now Hakodate) in 1854, and was named with the idea of connecting travelers to Hakodate, travelers, the West and the East, the past, the present and the future. The name was taken from the “Di” in Hakodate, which is the name of a place described in English in the expedition account of Admiral Lee’s arrival in Hakodate (present-day Hakodate) on the black ships.

2-1. Product Information
Although the product is described as ” grain whiskey production,” only domestic malt is used as a raw material. However, a special distillation machine is used.
It is not a single distillation machine, so it is called “grain whiskey”. Nikka’s Cafe Malt is in a similar category.
The standard product is aged for one year. The distillery knows that there are many opinions.
They say that they complete the product in one year by making innovations such as lactic fermentation of the mash, middle cut point of distillation, specifications for adding water when kegging, aging in small casks, and so on.
The name of the product also follows the Scottish tradition,

Distillery Facilities

Concrete tanks have been active in the wine industry since they first appeared around 2000. This is an unusual fermentation tank not often heard of in the whiskey industry.
Advantages include “high thermal insulation,” “uniform temperature due to natural convection,” “sanitary control,” and “few evaporating parts.

A hybrid still is one in which the first distillation is done in a single distillation and the second distillation is done in a continuous distillation. The alcohol content can be adjusted in the back distillation as well.
The main unit is made of stainless steel, but there is a copper element in the upper distillation column that can remove unpleasant flavor components (sulfur compounds).
Procurement of casks
99% of our products are aged in first fill sherry casks. Spanish sherry casks are made into special sizes such as 100L casks at a French cask company (Couparège) with which we have a partnership, to speed up the aging process.
Bourbon casks and second or later casks have a volatile oil component that tends to cause unpleasant aromas in young whiskies.
3. crowdfunding information
As of December 14, 2012, the crowdfunding campaign has raised approximately 54 million yen in support of the 6 million yen goal. The funds will be used to procure materials such as Hokkaido malt, yeast, water, and sherry casks.
Some of the contents are omitted. Owner’s casks are already sold out.

The standard products could be available as early as December 2024. Other distilleries are so-called “newborns,” but the amount of support they are attracting shows that Di Tripper Distillery is a high-profile distillery.
