2. Hakkai Jozo, Fukasawahara Distillery
The Fukasawahara Distillery, operated by Hakkai Jozo—known for its “Hakkai-san” sake—is located within “Uonumano-Sato,” a leisure facility featuring various restaurants, museums, cafes, and more.
In 2005, the facility began producing shochu under the name “Fukasawahara Kura,” and after obtaining a whisky production license in April 2016, it has continued to produce grain whisky made from rice ever since.
The company also operates the Niseko Distillery, making it one of the few distillers—even among the growing number of craft distilleries in recent years—to own two distilleries.
It began producing rice whisky in 2016, usingthe same“Raiden-sama’s Clear Water”as its Hakkaisan sake to achieve a pure flavor. This water, born from abundant snow, is clear and soft.
Sake yeast is used in the mashing process, resulting in a truly unique whisky that is a hallmark of Hakkaisan, a company with a long history of working with rice.
