The amount of yeast* was tripled and the fermentation period doubled from the beginning to create a deeply honed new pot, which was then aged in the same barrels used for Hyakunen Umeshu (plum wine). The resulting blend is ” TAKAZO REBORN “, which is composed mainly of the original sake produced from this process. About PURE MALT Series
Although there is no clear description in the release information, it is assumed that the “PURE MALT series”, which will be released at the same time as “TAKAZO Reborn”, is a product blended from imported sake and sake produced at TAKAZO distillery, judging from the price range and the name of the product. However, since there is no mention of “the original sake produced at the TAKAZO distillery,” it may be that the product is a blend of imported original sake purchased from overseas, refilled in plum wine or quercus oak barrels, and additionally aged at the TAKAZO distillery, and is to be sold under the name “PURE MALT WHISKY” (see below). The name “PURE MALT WHIKSKY” may be used to describe the blend.

About TAKAZO Distillery
General liquor manufacturer Meiri Sakarui Co., Ltd. obtained a license to produce whisky on September 26, 2022. However, the company actually started making whisky in 1952, but the whisky license was returned due to an accidental fire at the factory about 60-odd years ago. Since then, the company had given up whisky production.
After many twists and turns, in 2022, the company reopened the TAKAZO Distillery as a craft distillery made by human hands to match the scale at the time of reopening, and has been in business ever since.
Mito is a “water city” with a rich vein of water surrounded by the Naka River and Lake Senba. The magnesium-rich water that comes from underground is one of the most important elements for whisky making. The rich bounty of nature seems to be pumped up carefully and unchanged every day.

The book vividly depicts the days when he went to Scotland alone to study as a young man and overcame many hardships to complete Japanese whisky, as well as his companion, Rita.

Launching in 2019. With the world experiencing an unprecedented whisky boom, what were the managers of craft distilleries thinking and what were their thoughts as they took on the challenge of making whisky? This book tells the stories of 13 craft distillery owners, including Ichiro Hido of Venture Whisky, famous for his Ichirose Malt, who inspired the birth of craft distilleries in Japan.

This is the Japanese version of Whisky Risng, published in the US in 2016, with much updated content. Not only does it describe the history of Japanese whisky in detail, but it also includes data on all the distilleries in Japan, including the craft distilleries that have been founded in recent years. The book also includes descriptions of the legendary bottles that have been released, as well as information on bars where Japanese whisky can be found.
This is also our effort to quickly gain knowledge of the blending and aging techniques, but it is a very high quality product for the price, and can be enjoyed as a highball.
